Recipe of the Week 6: Best Ever Chocolate Chip Cookies

1 c. butter, softened
3/4 c. granulated sugar
1 c. brown sugar
1 tbsp. vanilla
2 eggs
3/4 tsp. baking soda
3/4 tsp. salt
3 c. flour
3 c. chocolate chips

By hand cream the butter and sugar together.  Add in the vanilla and eggs.  Then add in the baking soda, salt, flour, and chocolate chips.  Mix just until combined.  You can use a spoon or your hands but don't use a mixer - it's mix the cookies too much and they won't turn out as good or pretty.  Bake at 400* for about 8 minutes.  The cookies should just have touches of brown on them.  Cool pan on a wire rack for about 5 minutes and then transfer cookies to a cooling rack.

I originally got this recipe from my friend Linda Stacey when we lived in Fort Collins, CO.  The recipe she gave me was double this and made about a million cookies.  I have halved her recipe and changed the amount of egg for this batch.  We love these cookies so much and love making them.  I have recently started making them and just cooking up a pan or two and freezing the rest for later.
