Recipe of the Week 13: Apricot Orange Scones

1 3/4 - 2 c. flour
1/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 c. cold butter, diced
1 tbsp. fresh orange zest
3/4 c. finely chopped dried apricots
1/4 c. sour cream
3 tbsp. fresh orange juice
1 egg
1 tsp. almond extract
Glaze:
1/2 c. powdered sugar
1/2 tsp. almond extract (orange works too)
2-3 tsp. milk
1 tsp. butter, optional

Preheat oven to 400*.  Combine flour, sugar, baking powder, and baking soda.  Cut in the butter to resemble coarse crumbs.  Stir in zest and apricots.  Combine sour cream, juice, egg, and extract; stir into dry mixture just until combined.  Turn dough out onto a floured surface and lightly knead 2-3 times.  Form dough into a round and slice into wedges.  Transfer to a greased baking sheet (or one covered with parchment paper) and bake for 15-20 minutes or until golden brown on top.  Let cool for about 10 minutes.  While scones are cooling combine glaze ingredients and drizzle over warm scones.  This will make about 8 scones depending on how you cut your round.

This recipe originated from Land O' Lakes.  They do come up with some pretty awesome recipes!

I thought these were wonderful!  I liked the flavors and although I don't usually put the glazes on my scones this one kind of needed it.  The glaze is just the "icing on the cake" so to speak.  The original recipe calls for 1 3/4 cups of flour but I found the dough to be a little looser than I like so I ended up having to knead more in at the end.  You could also just add less of the liquid.
