Recipe of the Week 11: Fonduta with Balsamic Glaze

1 tbsp. butter
8 oz. fontina cheese, diced
1/4 c. milk
2 large egg yolks
1 lb. pasta
Sirloin steak
Balsamic glaze

Cook pasta according to directions.  In a double boiler melt butter.  Add the cheese to the butter and stir until cheese begins to melt, add in milk and eggs.  Continue to stir until cheese is completely melted and sauce has thickened.  Toss fonduta sauce with pasta and serve on a plate.  Grilled steaks until desired doneness.  Place cooked steak on top of the pasta and drizzle entire plate with balsamic glaze.
This stuff is good!  The balsamic glaze makes the dish so make sure you have it.

This is our version of the delicious dish from Olive Garden a couple of years ago.  In looking up how to make a fonduta sauce we learned that fonduta is an Italian word for fondue.  This is sauce is great on the pasta with the steak and drizzled with balsamic.  Don't worry if you want to make it without the steak it is good that way too, especially with a flavored balsamic glaze (I recommend a blackberry one).
