Caprese Burgers

An original creation that is long past it's post mark on this blog.  I should have posted this well over a year ago when we first had them.  Oh well, you may now catch up on this burger that you have been missing out on for a whole year.

1 lb. ground beef
1 pkg. fresh mozzarella cheese, sliced
salt & pepper
fresh spinach
1 tomato, sliced
balsamic glaze
8 slices Texas toast garlic toast, toasted

Divide beef into 4 equal portions.  Form beef around 1-2 sliced of mozzarella cheese to make a patty.  Season with salt and pepper.  Grill until medium-well.  Place patty on 1 slice of toast, top with spinach, tomato and a drizzle of balsamic, top with another slice of toast.  Repeat with all burgers.
