Carmelized Bacon

We thought we would try out this bacon.  We ate it on our Yummy Chicken Sandwiches.  It made our yummy chicken sandwiches even yummier!  This recipe comes from our cookbook Beyond Macaroni & Cheese by Mary Beth Lagerborg & Karen J. Parks.

1/2 lb. bacon
prepared mustard
brown sugar

Preheat oven to 400F.  Separate bacon strips and place on a baking sheet with sides or a broiler pan with slits in the top.  Spread each slice with mustard; sprinkle brown sugar on top.  Bake 10 minutes.  Watch so that it doesn't burn.
*Note: we tried this with both regular yellow mustard and with honey mustard.  we liked the regular yellow mustard best because you were able to taste both flavors sweet and savory.  Also to cook our bacon we put a cooling rack on our baking sheet with sides and that worked just great.
