Yogurt Pancakes

These have been our favorite pancakes for a couple of years now.  They are just delicious!  The recipe comes from First Meals by Annabel Karmel.

1 egg, lightly beaten
2/3 c. natural yogurt
2/3 c. milk
1 1/4 c. self-raising flour
2 tbsp. maple syrup
oil for frying

Mix together the egg and yogurt, then stir in the milk, flour and syrup.  Mix until batter is smooth.  Heat a little oil in a frying pan until sizzling hot.  Drop heaped tablespoons of batter into the pan, leaving plenty of space around each one and flatten slightly with a spatula.  They should spread to about 2 1/2 inches across.  Cook for 1-2 minutes or until lightly browned, then turn and cook for a further 1-2 minutes until browned and on the other side and set in the center.  Drizzle with maple syrup or serve with fresh fruit and whipped cream.
