Chunky Harvest Vegetable Soup

This is the only recipe that I have ever made up on my own and loved!  We have this soup every couple of months.  It's so easy to make and I love the flavors I get from it.

1 small onion, diced
2 stalks celery, diced
2 carrots, diced
2 tbsp. olive oil
2 zucchini, chopped
1-2 yellow squash, chopped
1-2 chili, diced or 1/2 can diced chili
2 ears of corn
1-2 tomatoes, peeled & seeded, diced
4-5 small potatoes, diced
1 can creamed corn
1 can diced tomatoes
2 c. chicken stock
salt & pepper to taste
hot sauce to taste

Heat oil in a saucepan; add in onion and let sweat.  Add celery and carrots; cook until tender.  Add remaining fresh ingredients and chicken stock.  Cover and cook until potatoes are cooked through.  Add canned vegetables and heat through.  Season to taste.  Serve with sour cream.
*The best thing about this soup is that really any vegetables will work.
