Peanut Butter Banana Chocolate Chip Muffins

City Market/King Soopers have a bi-monthly little magazine that they distribute called Optimum Wellness.  It some health articles, advertisements for health foods, coupons and recipes.  I got this recipe from the March/April magazine.  We love this recipe and have it at least once a month.  I must say that they do taste best cold not warm from the oven like most muffins.

1 c. whole wheat flour
3/4 c. brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 medium bananas, mashed
1/3 c. crunchy peanut butter
1/4 c. plain yogurt or sour cream
1 egg
2 tbsp. canola oil
3/4 c. semisweet chocolate chips

Preheat oven to 350F.  Coast standard loaf pan or muffin pan with cooking spray.  Combine dry ingredients.  Whisk together mashed banana, peanut butter, yogurt, egg and oil.  Add to the flour mixture until combined.  Fold in chocolate chips.  Turn into loaf pan or muffin pan.  Bake 20-25 minutes for muffins or 30-40 minutes for bread.  Cool on rack for 15 minutes before serving.
