Thanks to my wonderful cousin Sara for this great recipe (she calls them anti-recipes on her blog). I really enjoyed the soup and it really was super easy to make! This soup was quite hearty and was great with our stromboli but would also be great with just some really good bread.
2 c. split peas
6 c. water/broth
1 onion, diced
salt & pepper
Optional Ingredients
diced potatoes, rice, carrots, ham, ham hock, bacon, cheese
Combine peas, liquid and onion in a pot. Cook over medium to medium-high heat for about an hour or until peas are soft. This can also be done in the crockpot.
***NOTE: I needed more than 6 cups of liquid, I used about 8. I meant to put cooked, crumbled bacon on top but forgot to cook it up.
