I very rarely do I pick up a copy of Martha Stewart Living, however I am very glad this I pick the issue I did. I tore this page out of the magazine because it had Maple Granola and Breakfast Quinoa (I hope to try it soon too) and tossed the rest of the magazine so I'm not sure which issue it was. Anyway, this stuff is great!
3 c. rolled oats
1 c. dried unsweetened coconut chip (I used flaked coconut)
1 c. pecans or walnuts, chopped (I used 1 1/2 c. b/c I didn't have sesame seeds)
1/2 c. pure maple syrup
1/2 c. olive oil
1/2 c. packed brown sugar
1/4 c. sesame seeds (I didn't add this, I didn't have any)
1 tsp. coarse salt
3/4 tsp. nutmeg
1/2 c. golden raisins (I didn't add this either, I don't really like raisins)
Preheat oven to 300F. Mix together oats, coconut, nuts, syrup, oil, sugar, seeds, salt and nutmeg. Spread granola in an even layer on a rimmed baking sheet. Bake, stirring every 10 minutes, for 40 minutes. Add raisins, and bake until granola is toasted, about 10 minutes more. Let cool completely.
