Marmalade Roast

My mom would make this a couple times a year when I was growing up. This is yummy and Dustin fell even more in love with me the first time I made it for him after we were married.

1 1/2 c. pineapple juice, divided
1 envelope instant meat marinade
1 tsp. ground ginger
1/4 tsp. cloves
1/4 tsp. salt
3-4 lb. chuck or arm roast (beef)
1/2 c. orange marmalade
1/4 c. vegetable oil
1 tbsp. butter
1 tbsp. oil

Combine 1 cup of juice, marinade and spices. Pour over meat; marinade for 15 minutes. Melt butter and oil (1 tablespoon) in skillet; brown meat. Put meat in crock pot. Add remaining juice, marmalade and oil to marinade. Cover and cook 4-6 hours or until meat shreds.
**I don't always use the 1/4 cup of oil but I do use the butter/oil that the meat browned in.
